Had red pepper-allo ki sabzi, baigan ka bharta… rice and Rajhmah…for lunch burp… oh yes, finished it off with dannon yogurt with raspberry at bottom

I've been doing more cooking in the past 8 weeks than in the previous 5 years because my wifes not well (in a good way wink.gif )! Getting bored of desi stuff, I've been making more exotic fare recently....

Thursday - Chili Con Carne with red beans + White Rice
Friday - Fried Barramundi fish (lahori style) + wife finally made some excellent karree...
Saturday - Chicken a La Kiev + Mashed Potatoes

I'll love to call myself an expert...all I do is google a dish I like + recipe and voila!

But its funny....Chicken Kiev at a decent restaurant costs $25-30 per head. I made enough for 5 helpings and the ingredients couldn't have cost more than $15-20 and it was as tasty as a restaurant (minus the fancy decor)....it was a revelation calculating the gross margin of restaurants!!!

Yes, restraunts really make a killing. Perhaps most of their money goes to their decor, maintenance and to pay staff.

You fry it instead of baking. Basically, marinate fish pieces with ginger-garlic paste, red chili flakes, onion flakes (if available), salt and a little garam masala. Leave for 30 minutes then fry (not deep-fry) for approx 10 minutes on medium-high heat - turning over at least 1-2 times. Be careful the pieces don't break. Now, take the fish pieces out and put in a flat serving dish. Add large-cut onions and big pieces of tomato (and chopped green chilli) to the same oil in which you fried the fish (and a little more red chili flakes if you want). Cook for 10 minutes on medium flame and pour the concoction on the fish in the bowl. Squeeze lemon juice on top and add mint or parsley leaves.

Look, this is just a broad formula. Make it 1-2 times and you'll know how much spice your taste buds prefer, how much onion-tomato masala you want to add, whether you like mint or parsley...you'll find variations of this formula in countless restaurants throughout punjab. Its always called Lahori machhi or Lahore-style and no two places taste the same.

By the way, my non-desi friends were shocked to find us crazy desis adding spices to fish! For them the concept was alien. But when they tasted it, they really liked it. None left-over sad.gif

I have four days break due to Easter, so yesterday I cooked a full pizza for the first time (including the base) + sauce and toppings. The toppings were black olives, red peppers, chicken (small pieces) and mozzarella. It was tasty but I definitely see room for improvement. The base was too thick (almost as much as pizza hut) and I plan a really thin base next time, although getting it in a round or rectangular shape is not easy!!! I'll also add different toppings, but include the black olives which were great.

I went for a 4 hour hike in the Blue Mountains with my son. After that we stopped at a very well-reviewed conservation hut restaurant and both ate obscene amounts of really well done food because we were famished.

I had Roast Turkey sandwiches with cranberry sauce on this amazing thick turkish bread which is soft but rich and a large vanilla milkshake. My son demolished a plate of fish and chips (pretty impressive for a 6 yo) + chocolate milkshake.

I had such a horrible lunch in hostel that I don't even remember what it was!

[EDIT] I recall now. Rice, poori, cholas, cucumber/kakdi salad, mango pickle. There was also some white water like substance masquerading as curd which I ignored. laugh.gif

Thats what I thought when I was ordering!

I ordered two sandwiches and was about to order dessert when the lady asked if someone else was joining. She said our sandwiches are pretty big, order dessert after seeing how it goes. If one fills you up, you can pack the second. I finished both and didn't order dessert, but honestly these were the largest sandwiches I've ever eaten or seen! One would generally make for a filling meal.

Made a pizza base of wheat flour (atta used for chappati) instead of white flour. Wheat flour is a healthier option and in my opinion just as tasty. For toppings had a minced meat-bolognese sauce followed by cheese topped with spanish black olives. It was really good.....I'm beginning to think restaurants are a scam! tongue1.gif

Had really nice fish (baked) on spinach....put raw spinach on aluminium foil. Put fish fillet on top to cover the spinach, added olive oil, lemon juice extract, salt, black peppers and slices of red chilli (large cuts not flakes) all on top of the fish and closed the foil. Put the packet in the oven at 190 degrees for 30 minutes. Open it, remove the red chilli and eat. Its really simple but damn tasty!

Made some meatloaf and mashed potatoes last night.....its not difficult to make but there are a dozen ingredients so I won't repeat the recipe here......it includes minced meat, egg, whipped cream, stale bread, milk, parsley, oregano, salt, pepper etc....quite an easy dish to make actually and a pretty good meat fix if you're ravenous....(I really hit the gym and pool hard yesterday so deserved a big meal biggrin.gif )....

Momo is basically a dish supposed to be originally from Nepal/Tibet/Sikkim. It is made with a stuffing (vegetable, chicken etc) wrapped in wheat flour dough and then usually steamed. It is supposed to be quite healthy due to the fact that its steamed although some people also like fried ones. Its usually served with a spicy chutney.

The meatball sandwich is what they call Meatball Marinara. Here they usually give it as a sub and one can convert it to a meal (or even a salad) by adding some more money. I am attaching a pic of the sub as well!

Thanks. I like to try different nations cuisines but somehow I've never eaten Nepalese or Mongolian food although there are good restaurants of each nation 10 minutes drive from home.

This momo looks great! I'm going to try the recipe (or a variation of it) fairly soon....

They do resemble the chinese dumpling jiaozi but momos are native of Tibet. The refugees have of course taken it to many other places like Nepal, Sikkim etc. (also Delhi, Dharmshala among other places). In traditional Tibet staple being barley flour (called tsampa) it is used for the flour (instead of wheat) and its heavier than the dumpling.

Not a food court Hildebrand. Food courts would have subway, pizza hut, mcdonalds, kfc, indian, chinese, thai, salad bar, lebanese, greek and italian. Thats about it.

I'm talking about proper sit-down restaurants with varied menus and chefs (and owner) from that country and specialising in that cuisine. Sydney is a melting pot of different cultures and you can find many, many cuisines here. I don't think such exotic fare would be available at food courts anywhere.

The only one I found missing strangely was Afghan food, which I do enjoy once in a while when available.....

For some reason I haven't seen an Afghan restraunt here at all.
I do love Caribbean though. I used to visit this restraunt which served a fabulous Jamaican Jerk Chicken among other dishes. They had a lovely buffet too in the weekends.

Its a regular food festival at my place. The greatest cook in the world - my mother - is visiting her grandkid (not me dry.gif ) and my wife and I are enjoying her culinary abilities....aloo ke parathe (an art form with her), karhi, dumm wale kebab etc....I've doubled my exercise routine because I've kind of doubled my eating for the past week!!!

Have been having lots of great food lately courtesy visits elsewhere. But this thread is about last meal I guess.

I had a lovely breakfast today including cutlets, fruits etc. Also ate away the milk powder somebody gave me. Its best not mixed with water. tongue1.gif
